Sweet and Sour Pork
Lean pieces of pork cooked in a sweet and sour sauce
Ingredients:
2 ½ lbs/ 1.1 kg lean pork cut into cubes
1 tbs soy sauce
½ cup white vinegar
1 cup brown sugar
1 ¼ cups water
1/3 cup water extra
¼ cup cornflour
Method:
Place pork in slow cooker. Mix brown sugar and first amount of water into a bowl. Add vinegar and soy sauce. Stir and pour over pork. Cover and cook on Low for approximately 8-10 hours or on High for 4-5 hours.
Remove any fat which accumulates during cooking.
Stir second quantity of water and cornflour together in a small bowl. Add to the slow cooker. Cook on High for 15 – 20 minutes to thicken.
Serve with rice.
