Beef and barley stew

Beef and barley stew cooked slowly with tomatoes, chilli and celery is an old time family recipe that has been used over the years.



Ingredients:

3 lbs/ 1. 5 kg lean mince beef
2 tsp / 30 ml salt
¼ tsp / 1 ml pepper
2 tbsp / 30 ml vegetable oil
3 onions, peeled and chopped
1 cup chopped celery
1 cup regular barley
2 tbsp / 30 ml chilli powder
1 litre / quart tomato juice
1 cup water

Method:
Mix beef with salt and pepper. Heat the oil in a large heavy saucepot. Add the beef and onion, separating the meat into pieces; cook about 5 minutes, stirring occasionally. Skim off any excess fat, if desired.
Place into slow cooker. Stir in celery, barley, chili powder, tomato juice and water.
Cover and cook on Low 12 – 14 hours. Serve with crusty bread.
